Once, a few years ago, I decided to simply our life by making tacos for dinner every Tuesday.
But guess what?
We got really, really tired of tacos after a few months.
(Well, I got really tired of it. I'm not sure the kids ever did.)
And yes, yes, I know, there are many different ways that you can prepare tacos, so it didn't need to be that way.
I took a break from tacos for a while, and then eventually stumbled onto this super-easy variation: Taco Pizza.
It's basically a pizza crust instead of a taco shell or tortilla.
We used refrigerated pizza dough, but you can make your own dough or use crescent rolls instead.
Here are some other ways you can customize your Taco Pizza:
- Substitute black beans
- Stir crumbled tortilla chips (or Taco Doritos!) into the meat mixture
- Use a different kind of cheese (I always like Monterey Jack), or even mix two different cheeses together
- Change the pan size depending on how you like your pizza dough. A 12" pan will give you a thick crust, and a 14" or 16" pan will give you a thin crust.

Ingredients:
- 1 (13.8 oz) pizza dough (we used Pillsbury, Classic)
- 1 lb ground beef
- 1 oz packet taco seasoning
- 15 oz can refried beans
- 1 cup salsa
- 8 oz shredded cheddar cheese
- 2.25 oz can sliced olives
- 1 roma tomato, diced
- 1-2 green onions, diced
- Sour cream (optional; for topping)
Directions:
Preheat the oven to 400 degrees and grease a large baking sheet.
Roll the dough out onto the baking sheet, pressing it to the edges. Bake for 8 minutes.
Brown the ground beef in a medium skillet over medium-high heat. Drain grease.
Stir in the taco seasoning ....
... and then stir in the refried beans.
Spread the salsa over the pizza crust, followed by the beef and bean mixture.
Sprinkle cheese over the entire pizza ...
 
... and then top the pizza with olives.
Bake for an additional 8-10 minutes, until the cheese is melted and bubbly.
While the pizza is baking, dice the tomatoes ...
... and slice the green onions.
Once the pizza is out of the oven, sprinkle the tomatoes and onions over the pizza.
Cut the pizza and serve with sour cream on the top of the slices.

Notes
Switch it up by changing the types of meat, salsa, cheese, or beans.
Vary the pan size depending on how thick or thin you like your crust.
