Everything with cream cheese is good.
This is true whether you're talking about desserts, pasta sauce, pancakes ... or this Creamed Spinach Stuffed Chicken.
This stuffed chicken recipe is super easy to make and delicious. You can easily pair it with roasted veggies, rice (or cauliflower rice), or mashed potatoes to make a well-rounded and filling dinner that your family will love.
If you're like my husband and prefer dark meat, you can certainly substitute boneless chicken thighs for the chicken breasts.

Stuffed Chicken Ingredients
- 2 Large boneless skinless chicken breasts (the biggest ones you can find, to make them easier to stuff!)
- 1 Tbsp. Olive oil
- ½ tsp. Garlic powder
- ½ tsp. Onion powder
- ½ tsp. Paprika
- Salt and pepper to taste
- 3 C. Fresh baby spinach
- 2 Tbsp. Butter
- 3 oz. Cream cheese, ideally softened and at room temperature
- ¼ C. Bacon pieces
- 2 tsp. Minced garlic
- ¼ C. grated Parmesan cheese
Instructions
Preheat the oven to 375 degrees.
Season the chicken with garlic powder, onion powder, paprika and salt and pepper to taste.
Heat the olive oil in a skillet over medium high heat and sear both sides of the chicken evenly.
Remove the chicken and set aside to cool a bit.
Add butter to the same skillet at the butter and reduce the heat to medium.
Stir in the garlic, and saute another 30 seconds.
Mix in the spinach, and saute until slightly wilted.
Add in the cream cheese ...
... bacon ...
... and parmesan cheese.
Add salt and pepper to taste, and then stir together until the cream cheese has melted.
Use a sharp knife to slice a pocket into the side of each seared chicken breast.
Stuff the chicken with the filling.
Place the chicken into a well greased baking dish.
Bake for 25 minutes, or until cooked through.

Spinach Stuffed Chicken

Ingredients
