Paleo Almond Butter Cookies With Only Three Ingredients

I am no Paleo expert by any means.

But I discovered a podcast I really like called I'm Too Busy for Nutrition and was really struck by what was said about simple carbs (which I eat tons of!) The way he described everything was so compelling that I decided to try his breakfast smoothie recipe (which you can read about here) and have tried to cut out carbs a little bit the past few days. (For example, instead of pasta or even a sandwich for lunch, I've had cheese, turkey, and hummus.)

The idea of giving up cakes, cookies, and bread for the rest of my life makes me want to weep and render my garments, so I tried searching to see if there were some alternatives that had less carbs.

I found this recipe on the Thank Your Body blog and Rebecca and I whipped it up in no time.

Three-Ingredient Paleo Almond Butter Cookies

Egg, honey, and almond butter -- what could be easier?

Ingredients

1 egg
⅓ cup honey
1 cup almond butter

Directions

Preheat oven to 350.
Mix together all ingredients well.
Line a cookie sheet with parchment paper and drop the batter on the paper in heaping tablespoons.
Bake for 8 minutes (they will still look soft when you take them out).

Cool for five minutes.

Eat with milk!

They are not as "cakey" as regular cookies, obviously, but Rebecca, Benjamin, and I all liked them quite a bit. (My oldest daughter, Rachael, is not home right now, but I'm sure she would hate them. She hates regular peanut butter cookies too.)

I definitely plan to make these again!
