Layer the mixed nuts and semi-sweet chocolate chips in your Crockpot. Place the almond bark on top so it melts evenly over everything.
Cover the Crockpot and set it to low. Let it cook for 1 hour. While it melts, line a few baking sheets with parchment paper. After 1 hour, stir the mixture well using a silicone spatula. The chocolate should be fully melted and coating the nuts smoothly.
Use a cookie scoop or spoon to drop portions of the mixture onto the parchment-lined baking sheets.
While the candy is still warm, add Christmas sprinkles on top.
Place the baking sheets in the fridge for about 1 hour, or until the candy is firm and set.
