BBQ Chicken Flatbread

Ingredients
  

For the base:
  • 2 flatbreads lavash, pita, or pre-made pizza crust
For the topping:
  • 200 g chicken shredded, cooked or roasted
  • 5 tablespoon BBQ sauce of your favorite
  • 100 g mozzarella cheese or a mix of cheddar and mozzarella, shredded
  • 1 red onion thinly sliced, small
  • 1 sweet pepper thinly sliced (optional), small
  • 2 tablespoon cilantro for garnish, chopped, fresh, or parsley
For serving (optional):
  • Sour cream or Greek yogurt
  • Lime wedges

Method
 

  1. Preheat your oven to 200°C (390°F). If you’re using a pre-made pizza crust, follow the directions on its packaging. Line a baking sheet with parchment paper and place the flatbreads on it.
  2. In a bowl, mix the shredded chicken with 3 tablespoons of BBQ sauce. Let it sit for about 5 minutes so the flavor absorbs.
  3. Spread a thin layer of BBQ sauce (about 1 tablespoon per flatbread) evenly over each flatbread. Evenly add the BBQ chicken mixture over the flatbreads.
  4. Sprinkle the shredded cheese on top of the chicken.
  5. Add the sliced red onion and sweet pepper, if using. Place the flatbreads in the oven and bake for 10–12 minutes, or until the cheese has melted and is slightly golden, and the edges of the flatbread are crisp.
  6. Remove from the oven and let the flatbreads cool slightly.
  7. Garnish with chopped fresh cilantro or parsley.
  8. If desired, serve with sour cream or Greek yogurt and lime wedges.
