Taco Ranch Bites

These Taco Ranch Bites are a quick, easy snack made with seasoned ground beef, crunchy tortilla scoops, and melted cheese. The mix of taco seasoning and ranch adds extra flavor without any extra work. They come together fast, use basic pantry ingredients, and are great for family nights, casual gatherings, or anytime you need something warm and snackable.

Ingredients
  

  • 1 lb ground beef 450 g
  • 2 tablespoon taco seasoning
  • 1 tablespoon ranch seasoning or ranch dressing mix
  • ¼ cup water
  • 24 mini tortilla scoop chips e.g. Tostitos Scoops
  • 1 cup cheddar shredded, or Mexican blend cheese
  • 1 small tomato diced
  • 2 tablespoon fresh cilantro chopped
Optional toppings:
  • Sour cream
  • Guacamole
  • Salsa

Method
 

  1. Heat a skillet over medium heat and cook the ground beef until browned and fully cooked. Break it up as it cooks, then drain off any excess fat.
  2. Add the taco seasoning, ranch seasoning, and water to the skillet. Stir well so the beef is evenly coated. Let it simmer for 2–3 minutes, until the mixture thickens slightly.
  3. Preheat the oven to 350°F (175°C). Arrange the tortilla scoop chips on a baking sheet. Spoon the seasoned beef into each chip.
  4. Then, sprinkle with diced tomato and shredded cheese. Bake for 5–7 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and sprinkle with chopped cilantro.
  6. Serve warm with sour cream, guacamole, or salsa on the side.
