- In a medium bowl, combine the lime gelatin with boiling water. Stir until completely dissolved. Add the cold water, mix well, and allow the mixture to cool to room temperature.
- Pour a thin layer of gelatin into the bottom of each parfait glass.Refrigerate for 20–30 minutes until just set but still slightly wobbly.
- In a mixing bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.
- Spoon or pipe a layer of whipped cream over the set gelatin.
- Repeat layers of gelatin and whipped cream until the glasses are filled, finishing with whipped cream on top. Top with green sprinkles, lime zest, or crushed candy.
- Serve chilled.
