Ingredients
  

  • 170 g lime gelatin
  • 2 cups boiling water 480 ml
  • 2 cups water 480 ml, cold
  • 1 ½ cups heavy whipping cream 360 ml
  • 3 tablespoons powdered sugar
  • green sprinkles Optional toppings: lime zest, or crushed green candy

Method
 

  1. In a medium bowl, combine the lime gelatin with boiling water. Stir until completely dissolved.
    Add the cold water, mix well, and allow the mixture to cool to room temperature.
  2. Pour a thin layer of gelatin into the bottom of each parfait glass.
    Refrigerate for 20–30 minutes until just set but still slightly wobbly.
  3. In a mixing bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.
  4. Spoon or pipe a layer of whipped cream over the set gelatin.
  5. Repeat layers of gelatin and whipped cream until the glasses are filled, finishing with whipped cream on top. Top with green sprinkles, lime zest, or crushed candy.
  6. Serve chilled.
