Ingredients

  • 2 pita breads whole wheat
  • 2 avocados ripe
  • 1 tablespoon lemon juice
  • 1 clove garlic minced
  • Salt and pepper to taste
  • ½ cup cherry tomatoes halved

Method

  1. Cut each pita bread into 8 triangle pieces to look like tree sections. Lightly toast the pita triangles in the oven at 350°F for about 5 minutes until they are a little crispy but not too hard.
  2. Scoop out the avocados into a medium bowl and mash them with a fork until smooth.
  3. Add the lemon juice, minced garlic, salt, and pepper, and mix everything together.
  4. Spread a good amount of the mashed avocado on each toasted pita triangle.
  5. Put the halved cherry tomatoes on top of the avocado, arranging them like decorations on a tree.
  6. Put the pita trees on a serving plate.
  7. Serve these festive avocado pita tree appetizers right away, or keep them in the fridge until you are ready to eat.

Notes

  • You can add a little chili flakes or a bit of balsamic glaze for extra taste.
  • You can make the parts ahead of time and put them together just before serving to keep the pita crispy.
