Ingredients
  

  • 15- bean soup mix
  • Half an onion
  • 2 celery stalks
  • 1 can diced tomatoes
  • 3 garlic cloves
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 6 cups vegetable broth
  • 32 ounces water

Method
 

  1. Chop the celery and dice the onion.
  2. Add the beans, tomatoes, celery, and onion to the crockpot.
  3. Mince the garlic and add it to the crockpot with the salt and pepper.
  4. Pour in the vegetable broth and water.
  5. Stir everything together.
  6. Cook on high for 4 hours or low for 6–7 hours, until the beans are tender.

Notes

You can soak the beans overnight if you prefer a softer texture or want to shorten the cook time. If you do soak them, reduce the added water slightly.
