Ingredients
  

  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • cup granulated sugar
  • ½ cup brown sugar
  • 3 overripe bananas
  • 2 eggs
  • ½ cup butter melted
  • 1 teaspoon vanilla extract
  • 1 cup cinnamon chips

Method
 

  1. Preheat the oven to 350°F (175°C). Grease an 8- x 4-inch loaf pan with cooking spray or butter. Set aside. In a large mixing bowl, mash the bananas until smooth.
  2. Add the eggs, melted butter, and vanilla extract. Stir to combine. Mix in the flour, baking powder, baking soda, salt, cinnamon, granulated sugar, and brown sugar until just combined—don’t overmix. Fold in the cinnamon chips.
  3. Pour the batter into the prepared loaf pan and smooth the top. Bake for 1 hour, or until a knife inserted into the center comes out clean.
  4. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
