West African Peanut Stew with Sweet Potatoes

This stew not only tastes delicious, but it’s also very nutritious. It makes a warm, filling meal that’s particularly nice in the fall.

I’ve made this stew for guests a few times and they’ve always been very impressed.

Ingredients:

- apple juice - tomato juice - peanut butter - sweet potato - cabbage - ginger

Place the peanut butter, apple juice, and tomato juice in the slow cooker.

Step 1:

Put the slow cooker on high and wait for about ten minutes. Whisk to combine.

Step 2:

Add the remaining ingredients to the slow cooker and stir well.

Step 3:

Cook on low for 8-10 hours or on high for 4-5 hours.

Step 4:

Serve with rice and pita chips if desired.
